Nostalgia over the weekend !! Neyyappam, Erachichoru, Thengachoru & Avil milk

This weekend prepared few recipes that made me go back to the memories of my childhood. My mom’s which is our family’s all time favourite snack, Neyyappam, ( Neyyu means ghee though I haven’t seen anyone frying it in ghee, may be our great great grandmothers used to , and appam means a commonly rice dish ). My mom prepares this I guess whenever she feels happy. Coz on special occasions like Eid, when me and kids coming home and such, Mom prepares it in bulk, we would be evening snacking next day evening for tea.
Then is her other rice dishes, Erachi choru & Thengachoru. Yummylicious dishes. Do prepare it at home and am sure you won’t be disappointed.

Stainless steel pressure cooker :
Ladle stainless steel :
Heavy bottom stainless steel cooking vessel :
Tempering / Tadka pan :
White rice - 2 cups
Jaggery - 250 gm melted in 1 cup water
All-purpose flour - 1 helped tbsp
Ghee - 3 tbsp
Coconut pieces - 1/4 cup
Cumin seeds - 1 tsp
Cardamom powder - 1/2 tsp
Black cumin - 1/2 tbsp
Salt - a pinch
Coconut oil or any oil - for frying
ERACHI CHORU ( Meat Rice _
Kuruva rice or Red rice - 3 cups
Water - 2 bowls and more if needed
Beef masala -
Beef - 1.5 kg with bones
Onion - 2 large
Tomato - 2 medium - large
Ginger - 1” peice
Garlic - 8 cloves
Green chillies - 8
Turmeric powder - 1 tsp
Red chilly powder - 1.25 tsp
Coriander powder - 1 tbsp
Garam masala powder - 1/2 tsp
Coconut oil - 2 - 3 tbsp
Curry leaves - a handful
Coconut oil - 1 tbsp
Ghee - 1 tbsp
Dates - 5 - 6 or more
Tamarind - lemon sized soaked in hot water for pulp
Coconut oil - 3 tbsp
Mustard seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Ginger - a medium size chopped
Green chillies - 4 chopped
Red chilly powder - 1 tsp
Turmeric powder - 1/4 tsp
Sugar or jaggery if needed
Roasted fenugreek powder - a pinch
COCONUT RICE ( Thenga choru ) :
Matta rice / Red rice - 2 cups
Hot Water - 8 - 12 glasses depending on the rice quantity
grated coconut - 1 cup
Sliced shallots - 1 cup
Fenugreek seeds - 3/4 tbsp
Turmeric powder - 1/2 tsp
Chicken pieces - 1 kg
Coconut oil - 3 tbsp
Shallots - 6 - 7 halved
Curry leaves - a handful
Tomato - 1 large chopped
Ginger - a small piece
Garlic - 4 cloves
Green chillies - 3 - 4
Roasted coconut :
grated Coconut - 1 cup
Dried red chilles - 5 - 6
Curry leaves - few
Fennel seeds - 1 tsp
Coriander seeds - 2 tbsp
Black peppercorns - 1 tsp
Coconut oil - 1 tbsp
Ginger - a small piece
Shallots - 3 sliced
Garlic - 2 sliced
Turmeric powder - 1/2 tsp
Garam masala powder - 1/4 tsp
Tempering :
Coconut oil - 2 tbsp
Shallots - 3 chopped
Curry leaves - a few
Kashmiri red chilly powder - 1/2 tsp
